Having recently relocated to Middle East, I've had the opportunity to explore and appreciate the rich flavors of Indian cuisine. As a Filipino, adapting to dishes with intense savory profiles wasn't initially easy, but with the limited availability of Filipino, I had no choice but to indulge in Indian gastronomy. Surprisingly, I've come to genuinely enjoy the experience.
Masala
Masala is a delightful blend of aromatic spices that infuses a burst of flavor into Indian dishes. It's a harmonious mixture of various seasonings like coriander, cumin, and cardamom, giving a dish depth, complexity, and a spicy kick.
Parata
Parata is a type of Indian flatbread, resembling the Filipino pandesal. It's prepared by kneading flour into thin, delicate layers and then lightly frying it to achieve a delectable, crispy texture. It pairs wonderfully with various curries and chutneys.
Chapati
Chapati, often referred to as roti, is another staple Indian bread. This unleavened flatbread is soft, pliable, and makes for a perfect accompaniment to curries, grilled meats, or even a simple spread of butter.
Chai or Karak Tea
Chai, known for its aromatic blend of spices like cardamom and cinnamon, is a classic Indian tea. You may also come across Karak tea, a sweet and spiced tea that's a favorite local variation. Both are heartwarming and perfect for sipping on a lazy afternoon.
Mandi
Mandi is an exquisite Arabian dish that involves tender, flavorful meat, usually lamb or chicken, cooked with aromatic spices, saffron, and long-grain basmati rice. It's a dish that's a delightful fusion of Indian and Middle Eastern flavors.
Biryani
Biryani is a quintessential and highly cherished Indian dish that has captivated the hearts and taste buds of many. This aromatic and flavorful delicacy is a masterful fusion of fragrant, long-grain basmati rice and tender, succulent pieces of meat, often chicken, lamb, or even vegetables. What truly sets biryani apart is the medley of spices and herbs, such as saffron, cardamom, cloves, and cinnamon, which are used to season and color the rice.
Tandoori
Tandoori cuisine is famous for its vibrant, smoky flavors. Dishes are prepared in a clay oven called a tandoor, resulting in succulent meats and vegetables marinated in yogurt and spices. The smokiness adds a unique dimension to the taste.
Paneer
Paneer is a versatile Indian cheese, somewhat akin to Filipino kesong puti. It's used in a variety of dishes, from rich and creamy curries to grilled kebabs. The soft, milky flavor makes it a favorite among vegetarians.
Lassi or Yogurt Shake
Lassi, is a yogurt-based drink available in both sweet and savory versions. It's a refreshing and cooling beverage, perfect for balancing out the spices in Indian cuisine.
Falooda Kulfi
Falooda Kulfi is a delightful dessert that combines rose-flavored vermicelli with creamy kulfi ice cream, somewhat reminiscent of the Filipino halo-halo. It's a sweet and indulgent treat that's sure to satisfy your sweet tooth.
Exploring the diverse world of Indian cuisine has been a rewarding experience, offering a variety of flavors and dishes that have expanded my palate and deepened my appreciation for the culinary arts.
