Bulalo
Beef Stew
How to cook the perfect beef stew or in Pinoy parlance, Bulalo.
1. Buy the perfect ingredients. The fresher, the better.
- Beef bones. Choose the bones from the legs. The bone marrow is richer in this area.
- Garlic. Lots of it.
- Salt to taste
- Leafy vegetables (can be any of your choice, but preferably lettuce)
- Sweet corn
2. Start the cooking.
If you have pressure cooker, pressure boil the meat and bones until tender.
In the absence of a pressure cooker, boil the meat and bones ideally hours before. If you are using stainless cooker, it helps to drop a fork inside. The conduction of heat helps to cook the meat faster.
Once tender, pour the garlic. There's no ideal number of cloves to add, but the more the garlic the better. Let it boil for sometime.
Some fatty particles should be floating by now. Remove this until the boiling water is cleared.
Time to add some salt.
Drop the sweet corn and boil for 3 to 5 minutes. Follow the leafy veggies for about 2 minutes.
3. Set the table.
When eating bulalo, make sure that you have
- Soy sauce
- Garlic (chopped or cloves)
- Lemon or calamansi
- Chili
- Fish sauce
Either of the above condiments can be used with the bulalo soup.
The garlic is in case high blood pressure attacks.
